Cherry Chard Salad

This fresh salad is perfect for long summer evenings or with an afternoon BBQ. The stunning colours of our swiss chard make this dish really stand out. as it comes in yellows, oranges, pinks, reds, whites, and greens. Try our rainbow chard today!

Ingredients:

  • 150 Grams Wild Rice

  • 1/2 LB Swiss Chard (3-4 Stalks)

  • 1 Cup of Sour Cherries

  • 2 TBSP Boiling Water

  • 1 TBSP Red Wine Vinegar

  • 1 TBSP Extra Virgin Olive OIl

  • 1 Cup Feta Cheese

  • 1 Cup Walnuts, Chopped

  • 1 TBSP Pepper

  • 1 TSP Salt

Directions:

  1. Prepare wild rice according to the directions. While the rice is boiling. use a colander to steam the chard stalks for 3-4 minutes, then add the chard leaves for the last 2 minutes. Drain and set aside to cool.

  2. Chop Cherries in half and remove the pits.

  3. In a bowl, combine cherries, boiling water, red wine vinegar, and olive oil. Let this mixture sit for at least 5 minutes to let the cherries soften.

  4. Chop the cooled chard into sliced and add to the bowl.

  5. Add the rest of the ingredients to the bowl and mix well.

  6. Serve slightly chilled or enjoy at room temperature!
