Leftover Turkey Dinner Ring

This recipe will make you want to cook a turkey every Sunday just to have leftovers! For the best taste, try cooking one of our own local turkey, once you taste fresh you’ll never go back to grocery store turkey. Pair this fresh meat with our farm fresh vegetables and you have a match made in heaven.

Ingredients

  • 3 Cups of cooked Turkey, roughly chopped

  • 1 Cup of Mayonnaise

  • 1/2 Cup Cranberry sauce

  • 1 Cup Leftover Carrots

  • 1 Cup Leftover Turnip

  • 2 Cups Leftover Potatoes, mashed

  • 1 Package of Filo Pastry

  • 2 TBSP Black Pepper

  • 1 TSP Salt

  • 1 TBSP Green Onion. Chopped

  • 1 TBSP Fresh Thyme, Chopped

Directions:

  1. In a bowl combine potatoes, salt, pepper, turnip, and green onion. Using a hand mixer combine until smooth.

  2. in another bowl, combine your turkey, mayo, cranberry sauce, and carrots.

  3. In a 9” rectangular pan, lay your pastry out so there is a hole left in the center. Your pastry should be hanging over the edge for now. You should make sure your pastry is at least 4 sheets thick.

  4. Spread your potato mixture along the bottom half of the filo pastry ring.

  5. Add a single layer of filo pastry.

  6. Spread your turkey mixture around the ring and fold the top of the pastry down. it should look a similar shape to the photo below.

  7. Sprinkle with salt, pepper and fresh thyme

  8. Bake your ring at 350 for 20 minutes, or until golden brown.
